Here we have day two of some lunchbox love. By the way, my husband has asked to get in on the love and has been taking his lunch to work. This is surely a good sign.
Pictured:
Cucumber salad – cukes sliced ultra thin with a mandolin, just a splash of apple cider vinegar added for a little punch.
Applesauce with a light dusting of cinnamon.
Portion of oven baked salmon.
Spaghetti pasta with a homemade chunky tomato sauce. What is on top of the spaghetti? You’ll never believe me until you try it – it is so good – atop the pasta is a thin slice of brie cheese. It’s so very yummy, trust me.
A chocolate zucchini muffin. The recipe for this has minimal oil and is sweetened with applesauce. They are good, but it’s not my absolute favorite recipe. (My youngest, however, thinks she’s getting away with something by eating as many as she can in a day. I’ll let her keep thinking that.)
And last but not least, bottled water with a sprig of chocolate mint from our garden tucked in. It makes you feel like you’re drinking a gourmet flavored water with just a light hint of mint. We love it.
You may have noticed that I forgot to pack lunchbox notes today. It will be my youngest who notices. When I asked what sorts of things she would like in her school lunches this year, she replied “love notes”. My mommy polls may be down this afternoon…I’ll keep you posted.
