I know that I am behind in posting my “lunchbox love”, but hopefully, since most kids are on a traditional, as opposed to a year-round school schedule, it won’t interfere with anyone’s planning.

The main course is a vegetarian enchilada with some sour cream. These are fabulous and they (surprisingly) travel well!
Fresh figs from our garden. The beauties pictured here are halved and skewered on some little bamboo appetizer forks. My children think that anything on a skewer is more fun to eat, and who am I to argue?
Classic deviled eggs. Who can say no to a deviled egg?
Homemade banana muffins. Take your banana bread recipe and make muffins out of it. Just that simple. (These are my world famous recipe that I have not wanted to share. There may be a future blog post on that…)
Bottled water with a sprig of spearmint from our garden. Very refreshing way to drink your bottled water. I put the sprig in the bottle the night before and leave it in the fridge for maximum tastiness.
I forgot the lunch box notes again. I hope my youngest doesn’t organize a mutiny on the bow. Happy lunching!
